Island Teriyaki Bites
Ingredients
  • 1 12-ounce can diced SPAM® Lite
  • 1 8-ounce can well drained crushed pineapple
  • 1/4 cup finely shredded carrot
  • 1/2 teaspoon grated peeled gingerroot
  • 2 cups divided Hawaiian-style teriyaki sauce and marinade
  • 2 tablespoons melted jalapeño jelly
  • 1 tablespoon sesame oil
  • 48 sheets phyllo dough
  • 3 tablespoons sliced green onions
Island Teriyaki Bites

Make doughy and delightful triangles of deliciousness using a mixture of pineapple, green onions, SPAM® Lite and Hawaiian-style teriyaki sauce and marinade. This recipe is inspired by Hawaii, the Big Island, to deliver a big taste.

    Heat oven to 350ºF. Lightly coat baking pan with cooking spray.

    In bowl, combine SPAM® Lite and 1 cup teriyaki sauce; marinate 30 minutes.

    In skillet, heat oil; add SPAM®. Sauté 3 to 4 minutes or until lightly browned. Stir in pineapple, carrot, onions and gingerroot.

    Lay 1 sheet phyllo dough on clean work surface. Lightly coat phyllo with cooking spray. Top with second sheet phyllo; lightly coat with cooking spray. Cut each sheet into 3 (2-inch) strips.

    Place about 1 tablespoon SPAM® mixture on end of each strip. Fold phyllo diagonally, up and over filling until triangle-shape is formed. Lightly coat triangle with cooking spray. Repeat with remaining phyllo and SPAM®.

    Place triangles on baking pan. Bake 20 minutes or until golden brown. Lightly brush each triangle with jalapeño jelly. Serve with remaining 1 cup teriyaki sauce for dipping.
