- 6 6-inch corn tortillas
- 2 tablespoons butter
- 1 12-ounce can SPAM® Classic, cut into 24 slices
- 6 large eggs
- 2 cups powdered Queso Fresco cheese
- 2 tablespoons vegetable oil

Hey, you know how neighbors borrow stuff from each other? Like maybe a cup of sugar. Or the lawn mower. Anyway, we borrowed this tasty egg recipe from our good neighbors to the south, Mexico. Oh and, by the way Mexico, could we please have those hedge trimmers you borrowed back? Gracias.

In frying pan, heat oil. Quickly fry tortillas in hot oil. Pat dry with paper towels.

In same frying pan, fry eggs in butter over medium heat. Remove eggs from pan. Add SPAM®; fry until golden brown on both sides.

Place 4 slices fried SPAM® on each tortilla; top with fried egg. Sprinkle with 1/3 cup cheese. Cover with salsa.
