Chile Rellenos
Ingredients
  • 6 1-ounce slices asadero or mozzarella cheese
  • 1 12-ounce can SPAM® Classic cut into 1/2-inch strips
  • 1 pound poblano peppers
  • 1/2 cup husked and chopped tomatillos

    In heavy 10-inch skillet, combine poblanos and SPAM® Classic; cover. Cook over medium-high heat 12 to 15 minutes or until poblano skin chars on all sides.

    Place peppers in plastic bag; let stand 5 minutes. Remove skin.

    Stir tomatillos into skillet.

    Slit and stuff roasted poblanos with SPAM® mixture. Place 1 slice cheese over each poblano. Return to skillet; cover. Reduce heat to medium. Cook 3 to 4 minutes or until cheese is melted. Serve with salsa, if desired.
